Malbec grapes are hand-harvested but clusters were pressed softly at very low pressure so that the must did not take on any colour from the skin. Very fresh on the nose, with aromas of red fruits, currants, strawberries and delicate notes of white flowers. Sauvignon Blanc grapes grown only 7.5 miles away from the Pacific Ocean in the Manzanar Vineyard, which benefit from its cooling influence, are employed in this aromatic wine. Aged on its lees for three months to heighten the varietal character and lend texture and mouth-feel, it shows nervy acidity and mineral flavours blended with aromas of citrus fruits, herbs, green chilli pepper and passionfruit. Made from 100% cool-climate Chardonnay grown in the Manzanar vineyard. Hand-picked grapes are whole-cluster pressed and fermented in stainless steel using a number of yeast strains including native yeasts. About half the blend went through a malolactic fermentation and the final wine was fine-lees aged in French oak barrels for ten months.
